This is a super easy, healthy dessert, and great for guests. I like to double or triple the recipe to make several batches on different days/weeks, or freeze the topping in portions. It's best served warm, but makes a fine cold midnight snack. It can also be made a day ahead.
1. Slice 3-4 apples in half with a large knife, then scoop out the seeds and stem parts with a melon baller.
2. Mix together:
a little over half stick/quarter cup melted butter or margarine or fat of your choice (I've used part olive oil or coconut oil.)
1/2 cup oats
1/2 cup flour (I used whole wheat) or gluten-free 'flour' of your choice
1/2 cup brown sugar (or white sugar with date syrup or molasses or agave syrup)
1 tsp cinnamon
pinch of ground ginger
pinch of salt
3. Fill and top apple halves with the mixture.
4. Bake at 350 F/180 C until tops are golden brown and apples swell, about 30 minutes.

UPDATES: The last couple times I made this I included ground walnuts or hazelnuts. You can tweak the recipe to your tastes. The leftover topping is also a real treat in yogurt.
What a simple but nice looking recipe. I make baked apples all the time, but this recipe dresses them up enough for Shabbos or company,

DeleteHi z, I like coconut oil, but I try to balance it with less expensive options. I really like it for high-heat cooking of veggies, squash, etc. I've taken to writing in my posts "oil of your choice" because I feel like I never know which oil will be considered the healthiest choice tomorrow.

ReplyDeleteI like this idea, a simple and delicious dessert. I also always have half opened bags of oatmeal from previous recipes. This is a good way to use it up.
ReplyDeleteThis is great because you can use up any kind of out from Irish to quick cooking. I often use the food processor to mix it, so either way they get ground up a bit.

ReplyDeleteTried this recipe tonight. Delicious and so easy! My husband loved them. I only had honeycrisp apples, but they turned out great. Did have to bake for about 50 min. since they were large apples. Great recipe! I'll be making these again!
ReplyDeleteGlad to hear the HoneyCrisp apples worked as well. As that is the only apple I have on hand (it is my favorite brand). They are in the oven right now and smell so amazing. I have never baked apples this way and can't wait to taste them! My kids are even going crazy in anticipation!
DeleteI didn't have any GF flour, so I just used some cornstarch and added extra oats. I also added a little white sugar and vanilla.

I saw your photo and recipe from a link on a friends facebook page. I just recovered from seasonal flu and thought this looked just what one would need during recovery! It was wonderful and sooooo simple (necessary while sick). I got the idea from the poster that said leftovers would be good as a yogurt granola so at the end of cooking, I added some seedless raisins to a couple of the apples....it was a nice addition when I chopped up the apple with raisins and topped on a cup of yogurt. Thank you quick, easy and versatile!

ReplyDeleteTheses look so good, we have some in the oven cooking right now, I love that it was simple enough for my 11 yr old to make pretty much on her own. The smile on her face when she finished was in itself more then worth while!!
ReplyDeleteThis is always my go-to recipe!! I have made it more times than I can count. ;) Great in the crock pot, too! My seven-year old daughter has made this 'her' recipe, in that she does everything but cut the apples. :) Love it!

ReplyDeleteYou can just make the topping ahead, or bake the whole thing ahead and rewarm them.

ReplyDeleteI think that would work fine. Since there are no chemical reactions like rising, you can really play around with the ingredients without messing anything up. I think almond flour would work very well, or how about ground walnuts and oats and skip the flour all together?
